Our Products

Villa Chiarini Wulf is a family-run farm in Vetralla, in the Tuscia region, an area nestled between Tuscany and Umbria. The influence of the Cimini mountains and the proximity to the Tyrrhenian coast create a unique microclimate. Our agricultural profession, which began in the early eighties, spontaneously led us to the choice of organic farming as the only viable path, which must necessarily be understood as an ethical value: respect for the soil, also a living organism, for the plants, for the animals, for those who work with us, and for those who buy our products.

Aronia Products

Aronia berries (Aronia Melanocarpa) have extraordinary nutritional and health properties, especially due to their high quantity of antioxidants. Aronia is a robust and resistant plant, and its cultivation has almost zero impact, with a longevity of about thirty years. The harvest takes place from the end of August to mid-September.

    A unique spirit obtained from the distillation of fermented Aronia juice.

    Clear and transparent, it surprises the nose with the liveliness of its unmistakable aromas. Pleasant notes of cherry in spirit, combined with a more vegetal nuance, invite tasting. Balanced and of great complexity, on the palate it confirms its softness, surprising with its aromatic intensity and length on the finish. Remarkable persistence, with a very pleasant delicate hint of marzipan.

Extra Virgin Olive Oil

From our 400 centenary olive trees, we produce monocultivar Canino extra virgin olive oil, an illustrious native variety of Tuscia that is particularly tasty and rich in antioxidants. The care of the olive trees, the harvesting between October and November, and the immediate processing of the olives allow us to obtain a structured oil with a right balance, spicy and herbaceous, with low acidity.

Our Wines

Our wines are an expression of the grape varieties and the territory from which they come. The work in the cellar is always handled firsthand with attention, inventiveness, and constant curiosity, interpreting what the raw material, the grape itself, requires. Throughout the transformation process, we use only indigenous and selected non-GMO yeasts, processing the grapes with the least possible impact to create a fine quality and healthy product.

    Aged 18 months in large oak barrels.

    Intense garnet red color, deep and complex aroma ranging from tea leaves to tobacco and vanilla. On the palate, the wine is warm, full, with a dense and soft tannic structure; high taste-olfactory persistence.

    Aged 18 months in large oak barrels.

    Intense garnet red color, complex aroma ranging from notes of small red fruits to spicy notes that recall licorice and cloves. On the palate, the wine is full-bodied and structured, with high taste-olfactory persistence.

Condiments

Our vinegars come from our white and red wines. The acetification process requires great attention and constant care. The key element is heat, which is why it takes place outdoors, in front of the vinegar cellar, during the summer months.

  • Balsamic Condiment

    Aged for several years in wooden barrels.

    The balsamic condiment has only two ingredients: our vinegar and our cooked must. The latter is obtained by concentrating white grape must at a constant temperature of 70 degrees for almost two days, at the end of which 40% of the product remains.

    Spicy Condiment | 50ml

    A spicy and soft condiment made by macerating chili paste.

    We harvest the chili when it is perfectly ripe and manually remove all the stems; then we grind it to obtain a rather dense paste. At this point, we add a little salt and let it macerate for six months, after which we add our white vinegar aged for five years in wooden barrels.
